I’ve liked Niomi Smart’s videos for awhile now and pre-ordered her cookbook right when it was announced…and now I’ve finally tried making my first of her vegan desserts! My Mom and I made her banana chocolate brownies together:
2 ripe bananas, peeled
1 400g can of black beans, drained
1/4 cup raw cacao powder
1/4 cup brown rice flour
1/4 cup almond butter
1/2 cup maple syrup
1/2 cup unsweetened almond milk
1/2 tsp baking powder
1 tsp vanilla extract
1/2 cup unsalted raw walnuts, plus 5 walnuts to top
- Preheat the oven to 350 degrees Fahrenheit. Grease a 21 cm x 10 cm baking tray.
- Add all the ingredients apart from the walnuts to a food processor and blend until smooth.
- Add the walnuts to the mixture and blend for a couple of seconds until the walnuts have broken down into chunks.
- Pour the mixture into the tray, then crush the remaining 5 walnuts and sprinkle over the brownie mixture. Bake in the oven for 20 minutes. Allow to cool fully in the tin before slicing into eight squares.
